Roti, the Indian unleavened breadRotis made of wheat or millets are a staple of the Indian diet. And while urban India is increasingly using refined flour, in the villages, the riots are still being made the traditional way- sweet, digestible, and absolutely delicious.  Of course, an hour after you have gorged these rotis, you will need a litre of water to quench your thirst.These rotis are truly special and no less a culinary art.Let me share with you the secret of making these amazing rotis.Women typically begin the preparations 30 to 40 minutes beforehand. Ihe dough is pounded and kneaded really well. It is then covered witha damp cloth and allowed to rest for half an hour. Now, to make even six rotis, you need almost a kg of flour. The riots are substantial in size and thickness. Once the rotis are rolled out they are cooked on a wood-fired earthen stove using a clay griddle. The slow even heat allows the rotis to cook through completely without burning the outer layer. Wood and clay give it an irresistible smoky aroma. No wonder, the rotis provide a truly satisfying gastronomic experience. The women who were busy preparing these rotis shared their daily routine. Besides cooking, they take care of all the household chores and also tend to the goats, cows and other domestic animals the family may own. And they are done with the chores by 9 in the morning! Now that’s efficient time management. 

भारत के खानों का प्रमुख आधार गेंहू व बाजरे की रोटी है।हमारे यहॉं रोटी का स्वरूप देखते ही देखते कितना बदल गया पर राजस्थान के गॉंवों आज भी वही देशी तरीक़े से ही रोटी बनती है जो स्वाद में मीठी पाचक व स्वादिष्ट होती है जिसे खाने के एक घंटे बाद एक लीटर पानी की अच्छी तृप्त वाली प्यास लगती है।
इस रोटी एसी क्या विशेषता है आइए जानते है।
मैं इन महिलाओं के रोटी बनाने के तरीक़े को बारीकी से अध्ययन कर रहा था तो मुझे इसका रहस्य समझ आया।
रोटी बनाने से 30 से 40 मिनट पूर्व आटा सांघना और उसे ख़ूब मठा मठा कर गूँथना फिर उस पर थोड़ा पानी लगा कर गीला कपड़े से ढक कर 30-40 मिनट रख कर फिर आटे को अच्छा गूँथ कर रोटी बनाती है महिला ने बताया कि वो 1 किलो आटे से मात्र 5-6 रोटी यानी गोलाकार मोटी रोटी बना कर मिट्टी के चूल्हे पर लकड़ियों की आग पर मिट्टी के तवे पर या फिर टूटे हुए मटके पर रोटी सेंकती है इस से रोटी अंदर तक पकतीं है व रोटी में मीठा स्वाद आता है व खानेवाले को पूर्ण तृप्ति भी आती है।
शायद ऐसा आनन्द शहर वालों व रईसों को भी नहीं आता होगा।
महिलाऐं बता रही थी कि खाना बनाने से ले कर घर की सफ़ाई सारा काम वो सुबह के 8 से 9 बजे तक पूरा कर लेती है जिसमें पालतू पशुओं की देखरेख भी शामिल है।
